Puffed Oven baked pancake
2 tablespoons butter
1 egg
1/4 cup milk
1/4 cup flour all purpose
1/4 teeaspoon almond or vanilla extract
1/2 tablespoom lemon zest ( optional)
Preheat oven to 475
Place butter in a four inch oven proof skillet or baking dish, heat int he oven until butter is melted.
beat eggs, milk., flour until smooth then add vanilla and lemon zest.
Pour batter into the pan of hot butter and returnt he pan to the oven.Cook until the pancake is puffed and golden, about 12 mins. Serve at once, accompaied by fresh berries and hot maple syrup. You can also add powdered sugar and fresh lemon.Toasted almonds are a nice touch too.
